Creamy Cranberry Bites

Creamy Cranberry Bites


  • 1½ cups raw cashews
  • ¼ cup refined liquid coconut oil
  • 2/3 cup blanched almond flour
  • 2/3 cup shredded unsweetened
  • coconut
  • ½ cup powdered sweetener
  • ¼ teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons water
  • 1 cup fruit sweetened cranberries*


  1. 1. Cover cashews with boiling water and let set for a least 15 minutes. Drain well.
  2. 2. Blend cashews into a smooth paste, scraping sides often. Add oil and blend again until very
  3. smooth.
  4. 3. In a bowl, combine cashew paste with remaining ingredients except cranberries. Mix together into
  5. a dough, then stir in cranberries.
  6. 4. Refrigerate until cold, then shape into small balls.


If you're following the THM plan, this would be considered an S.

*p r e p n o t e : The cranberries are delightful in here, but you could replace them with sugar-free chocolate chips.
